What is extra virgin Olive oil?Extra Virgin is the highest designation that can be assigned to an olive oil. In order to earn this designation, an olive oil must pass 2 tests. A chemical test, testing for FFA (free fatty acidity) of 0.8% or lower and peroxides at less than 20 milliequivalents per kilogram. These standards have been established by the IOOC (International Olive Oil Council)The second test is an organoleptic test which takes place in the nose and mouth performed by a panel of experts. This official sensory analysis of the olive oil is the second part of the legal method for determining the quality grade of the olive oil. Extra Virgin olive oil is not a shelf stable condiment and in order to obtain the maximum health benefits from this fruit, people should consume the oil in a timely manner by incorporating into their daily diets and health regiment.
